Eating toon can cause cancer? Shaanxi Provincial Center for Disease Control and Prevention

The Yan rejuvenation comes, and all things rejuvenate. Shaanxi CDC released March food safety and nutritional health tips: how to eat toon correctly.

Can toona sinensis containing nitrite cause poisoning?

March is the season for toona sinensis. Regarding toona sinensis, there are wild rumors on the Internet that “eating toona sinensis can cause cancer because it contains nitrite and nitrate”, “toona sinensis contains nitrite, and improper consumption may cause food poisoning!” Does toona really contain nitrite? Research It was shown that the contents of nitrate and nitrite were actually in the lowest state during the germination stage of toona sinensis, and the contents of nitrate and nitrite gradually increased with the passage of time. Like some other vegetables, nitrates and nitrites are also contained in it, but the content in toon is slightly higher, but it will not cause poisoning if eaten correctly.

How to eat Toona sinensis correctly?

It is best to only eat toona sinensis sprouts; Toona sinensis should have more purple-red leaves, and the content of nitrate and nitrite of toon in different periods is different. During the germination stage, the content of nitrate and nitrite in toona sinensis is the lowest, and the content of both will gradually increase over time. (Note: Do not eat the toon if it is rotten and deteriorated)

Blank before eating. Blanching is one of the best ways to reduce nitrite. Studies have shown that blanching for 1 minute can remove more than 2/3 of nitrite and nitrate.

Blank before freezing. Toon is a seasonal vegetable, and many people like to freeze it for later consumption. It is recommended to blanch the toon before freezing. Blanching can quickly inactivate the polyphenol oxidase in toona sinensis, which is beneficial to maintain the color and aroma.

Pickling the sprouts for a longer time. Because the content of nitrite will rise rapidly after the toona sinensis is pickled, reaching a peak in three or four days (when the added salt is 10%-20%), and the content far exceeds the permitted standard. It is recommended to marinate for at least 2 weeks and eat after the nitrite content has decreased.
