The main raw material of common zongzi is glutinous rice, and the glycemic index is 87%. When diabetic patients eat zongzi, blood sugar will fluctuate.
I am a diabetic patient for 51 years, and I deeply understand the embarrassment of diabetic patients who want to eat rice dumplings but cannot.
During the Dragon Boat Festival in recent years, I try to make zongzi by mixing grains with glutinous rice, so that I can eat zongzi without raising blood sugar.
Now, I am sharing the method of making rice dumplings with the majority of sugar lovers.
How to make rice
The rice dumplings are made of glutinous rice.
The shell is wrapped in bamboo leaves and tied with straw ropes. Because the bamboo leaves are different in size, the size of the zongzi is also different.
Each zongzi uses between 75-90 grams of glutinous rice. I incorporated 25% of the multigrain into the sticky rice to create a kind of mixed rice.
The miscellaneous grains can be buckwheat, oats, and barley (if barley is used, it should be soaked and cooked the day before), so that the glutinous rice of each zongzi is reduced to about 45 grams.
If you add fillings in the middle, subtract 5 grams of glutinous rice.
How to make stuffing< /p>
There are 4 kinds of stuffing that I usually use:
1. Bacon stuffing. The bacon is cut into 3 cm large and 1 cm thick pieces, placed in the middle of the mixed rice, wrapped with bamboo leaves and tied with straw rope or palm leaves.
2. Salted duck egg yolk stuffing. Cut the salted duck egg yolk in half, wrap the egg yolk with 5 grams of minced meat, wrap it in mixed rice, wrap it with bamboo leaves, and tie it firmly with straw rope.
3. Red bean paste filling. The red bean (also called red rice bean) is soaked for half a day the day before, and then steamed. Use a blender to make bean paste, add an appropriate amount of sweetener, remove the core of red dates and chop them into bean paste, knead into a bean paste ball a little bigger than a table tennis ball, put it in the middle of the mixed rice, wrap it with bamboo leaves, and tie it with straw matting rope.
4. Peanut rice dumplings. This is the easiest to make. Put ten peanuts and 50 grams of mixed rice into each zongzi. Wrap it in bamboo leaves and tie it with straw matting rope.
In the past few years, I have been making rice dumplings like this. Does not cause drastic fluctuations in blood sugar.
