8.benzopyrene
Common in smoked items such as roasts. The coking of fats in food undergoes thermal polymerization to form benzopyrene attached to the surface of the food. In high-temperature fried foods, benzopyrene is produced from repeated use of high-temperature vegetable oil and over-fried foods. The higher the temperature of the oil used for frying, the more times the oil is repeatedly fried, and the more benzopyrene will be produced.
